After attending the University of California, Mattox was selected by the Milwaukee Brewers in the eighth round of the 1984 amateur draft. He played seven years in their chain, reaching the AAA level with the Denver Zephyrs in his last two seasons. Following his playing days, he became a Colorado Rockies scout and later moved on to the Mariners organization. He was named scouting director of the club in September 1997 and held the position for six years. During his tenure, the team drafted big leaguers Matt Thornton, Willie Bloomquist, J.J. Putz, Bryan LaHair, Eric O'Flaherty, and Adam Jones. Mattox then served as farm director from 2004-2007 before moving into the pro scouting department.
Mattox died in 2012 at age 49.
