Doc Watson was drafted by the Minnesota Twins in 1980. He pitched in the minors from 1981-1984, going 14-12 and leading the 1983 Florida State League in appearances (55) while pitching for the Tampa Tarpons. He never made it beyond the FSL.

After his playing career ended, Watson became a coach for the GCL Reds (1985-1988). He was a minor league roving pitching instructor for the Cincinnati Reds in 1989 and was pitching coach for the Chattanooga Lookouts in 1990, when he also made an appearance on the mound (7 H, 6 R in 3 IP).

Watson was pitching coach for the GCL Pirates in 1991-1992, 1994-1998 and 2000. In between, he was a roving minor league pitching coordinator in 1993 and pitching coach for the 1999 Hickory Crawdads. In 2001 and 2002, Doc was the pitching rehab coordinator for the Pittsburgh Pirates.

Watson was the pitching coach for the 2003 Aberdeen Ironbirds and 2004 Delmarva Shorebirds. From 2005-2007, he was the minor league pitching coordinator for the Baltimore Orioles.

In 2008, Watson became a manager for the first time.
