Drafted by the Anaheim Angels in the 23rd round of the 2001 amateur draft, Mitchell Arnold began his pro career with the 2002 AZL Angels, going 0-1, 7.54 in 15 games, walking 29 and allowing 29 hits in 23 innings. The next year the giant right-hander was 1-3, 3.86 with 4 saves for the same team, cutting the walks to 19 and the hits to 17 in another 23 innings. He led the Arizona League in games pitched (21, tied with Dusty Dossett).

With the Provo Angels in 2004, Mitchell went 2-0 with 13 saves and a 2.48 ERA. He allowed only 12 hits in 32 2/3 innings, striking out 41 and allowing 14 walks. He led the Pioneer League in saves and was named to the All-Star team as the top reliever. He even made an appearance with the AAA Salt Lake Stingers, bypassing A and AA. He was bombed for 15 hits and 10 runs in 7 innings for Salt Lake, posting a 13.50 ERA in four outings.

In 2005, Arnold split time between the Cedar Rapids Kernels (0-2, 4 Sv, 6.94, 10 BB, 11 K and 14 H in 12 IP) and the AZL Angels (1 run, 1 walk, 3 hits, 10 K in 6 IP).
