Jose Centeno pitched in the minor leagues, Taiwan and Venezuela.

Centeno was 1-2 with a 3.86 ERA for the Leones del Caracas in the 1992-1993 Venezuelan League. He made his US debut with the 1993 Asheville Tourists, going 1-2 with a save and a 4.18 ERA in 43 outings. Only Sean Fesh had more appearances by an Asheville southpaw. He tossed 15 shutout innings for Caracas in 1993-1994, going 1-0. Moving to the Montréal Expos chain, he was very effective as a reliever for the 1994 Vermont Expos (2-0, 5 Sv, 2.20, 33 K in 32 2/3 IP). That winter, he was 0-1 with a save and a 4.50 ERA for the Leones. Jose split 1995 between Vermont (2 R in 10 IP, Sv) and the GCL Expos (1-0, Sv, 2.45). For Caracas that winter, he was 0-1 with a 2.00 ERA in 28 games (18 innings) as a LOOGY.

Centeno ended his US career in 1996 with the Delmarva Shorebirds (1-0, 2.28) and West Palm Beach Expos (4-4, 4 Sv, 3.90). He went 1-0 with a .82 ERA as a LOOGY (11 IP, 20 IP) in 1996-1997. In 1997-1998, he saw similar usage (21 G, 11 IP) and success (1.64 ERA). Signing with the Mercury Tigers for the summer of '98, he flopped in his brief stint in Taiwan (3 R in 1 IP). He pitched his last two winters with the Tiburones de La Guaira, allowing one run in six innings (12 games) in 1998-1999 and going 2-1 with 4 runs in 8 innings over 22 games in 1999-2000
