Chiang-Ho Chen has played for the Taiwan national team several times. He is the nephew of Fu-Lien Wu.

Chen played in the 2001 World Port Tournament, going 4 for 29 with one walk and nine strikeouts. He also appeared in the 2001 Asian Championship. In the 2002 Haarlem Baseball Week, Chen was 1 for 7. He was 0 for 1 in the 2002 Intercontinental Cup. He hit .278/.350/.389 and played error-free ball as Taiwan's second baseman in the 2002 World University Championship. He also played in the 2004 World University Championship and 2005 Asian Championship.

In the 2005 Baseball World Cup, Chen served as captain of the Taiwan entry. He was 3 for 13 while splitting third base with Yi-Chuan Lin and Sheng-Wei Wang. Drafted by the Brother Elephants first overall in 2006, Chen debuted in the Chinese Professional Baseball League in 2007 and hit .267/.299/.318.

He batted .259/.313/.296 for the 2008 Elephants.
